Caramel and vanilla flavors from the charred white oak barrels come through first with a spicy rye note from the spirit. The rye becomes more assertive in the finish. Clean, dry and spicy with a nice warmth. We crafted this rye to be smoother and more approachable than many rye whiskeys. Carefully pot-distilled, specifically to be aged in our selection of cooperages and sizes, the spirit is balanced between the spicy grain character of rye and the sweet caramel & vanilla flavors of high quality oak barrels. The nose has soft caramel and vanilla notes to start out, with a touch of sweet corn at the end. Robust barrel flavors come through on the first sip, with dark caramel and smoky notes, that are followed up by hints of spice from the rye. It finishes dry and smoky on the tongue with a lingering corn after taste. 2022 Wine Enthusiast Best Buy - 93 points and named one of Wine Enthusiast's 100 Best Spirits of 2022

Limited Release. This whiskey started out in new, charred American oak barrels that provides the robust caramel and vanilla notes which balance the spiciness of the rye. After this initial aging, the whiskey is transferred into freshly emptied Rhiskey Business beer casks from our own brewery. Because the casks came from our own brewery, they were filled with whiskey within 24 hours of the beer being removed. This ensures the freshness of the barrels which provides the maximum flavor and aroma impact. The extra aging in these beer casks gives the whiskey a sweeter, fruitier character that complements the spice and caramel notes of the rye whiskey.

Limited Release. 7 Year Aged Rye Whiskey. The extra aging adds a richer, sweeter profile to complement the spicy rye character of this mash bill. Rated 91 points by VinePair and named one of their "30 Best Rye Whiskeys for 2023."

This ensures the freshness of the barrels which provides the maximum flavor and aroma impact. The extra aging in these beer casks gives the whiskey a sweeter, roastier character that complements the sweet corn and caramel notes of the bourbon whiskey.

Empire Rye is meant to revitalize the history and allure of Rye whiskey from NY state (and Western NY in particular). This is a historically inspired spirit produced according to the Empire Rye standards to highlight the unique flavors of rye grown in the Western New York region.

Limited Release. Finished an additional 16 months in freshly emptied wine casks from our own winery, giving the whiskey a rich, fruity note that complements the sweet corn and caramel notes of the bourbon whiskey.

Our take on what is thought to be one of the first liquors distilled in the New World. Local NY Apple cider, fermented, distilled, and then aged approximately 15 months in our used whiskey barrels. This spirit is backsweetened with fresh apple juice, so there may be some haze in the bottle.

A unique grain-based spirit created by distilling a finished barley wine. The result is a fantastically interesting beverage with full malt and hop flavor originating from its base, enjoyable neat or on the rocks. Think of this spirit as a stand-in for gin in your favorite drinks, with an out-of-the-ordinary flavor.
